Chocolate Chip Cookie Pumpkin Bars

Ingredients

  • 3 1/4 cup whole wheat flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 cup butter
  • 1/2 cup pureed pumpkin
  • 1/2 cup white sugar
  • 3/4 cup brown sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • 12 oz semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan.
  • Combine the whole wheat pastry flour, baking soda and salt in small bowl. Set aside.
  • Beat the butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy, about 3 to five minutes.
  • Add in the pumpkin, beat well. Add eggs one at a time, beating well after each addition.
  • Gradually beat in the flour mixture and gently stir in chocolate chips.
  • Spread the dough in prepared pan. Bake for 20 to 25 minutes. Allow to cool completely before cutting into bars.
